Very pretty.  Is that a screen shot or a render?

This is an rFactor screen shot.  Porsches from the PCC mod at Toban rRaceway.

I'll stick with rFactor.  Good graphics, and physics.  The best net code I've ever come across.  No problem with FPS and 25 cars on the starting grid.  That's 25 players in online play, not AI. Highly moddable with many mods all ready released and more on the way, including Formula 3, NAGT, Stock Cars, etc.  Best of all NO StarForce.

I've been looking at the racing sim genre Kat.  Do you need a wheel for that?  Or will say a CH yoke and pedals do?  How is the variety of cars and are they customizable?  Last racing sim I played was Grand Turismo 1 for the PS1.

You don't need a wheel and pedals.  Some folks run with joysticks.
I'm not sure what you mean by customizable.    It is possible to add custom skins to the game. This is a racing sim.   The options are there to make it harder or easier, just as with a flight sim.

As far as car selection it comes with a number of fictional classes, no license fees to be paid, and then there are mods which can be added.  The PCC shown is one of the mods, there is also formula 3 open wheel.  Someone has done a Go Kart mod and a lawn mower racing mod is in the works.

I mean customizable as in can you build your own car, add aftermarket parts, etc.

Negative, this sim is geared to organized, sactioned, class racing.  Yes you can run a single player career if you want.  In that you start with a base car and s you race you earn points that can be spent to add upgrades to the car.  These upgrades move you up in class.

Now while that's there, it is not the main focus nor the strong point of this game.  The main focus of the gane is to allow online head to head racing in organized leagues.  These can be leagues based on one class of racing with championships, etc. Or they can be more informal leagues that may run more than one class or type of vehicle and are more about the comaradarie of club racing than winning a championship.

You do get to set up your car by adjusting springs, shocks, gear ratios, brake bias, tire preassures, etc.  In certain classes of racing some setup features are limited so that the cars are on a more equal footing to make for closer racing.

Here's a couple of forums you can look at to get an idea of what rFactor is about.  You'll need to scroll down to the rFactor specific sections.
